One of the most favorite Filipino dish is Tokwa't Baboy (Tofu and Pork). This dish compose of fried tofu slice and fried pork (sometimes boiled pork). Usually the tofu and pork are dipped in a tangy, sweet and sour blend of soy sauce with calamansi/lemon or vinegar. Most of the time the taste of the dish depends on how the sauce is made. My own version of the sauce consist of cheap and local ingredients that does not require expensive herbs and spices.
This recipe will make a Liter of "Tofu and Pork" sauce. Scale the ingredients down to make smaller quantity of sauce.
Ingredients:
1. 1 Cup Red Onions diced (White onions could be used but I prefer the red ones)
2. 1 Cup Celery chopped to small pcs. (Always use fresh ingredients)
3. 1 Cup Soy Sauce (Chinese soy sauce tastes good which is always available in groceries)
4. 1 Cup Vinegar or Calamansi/Lemon Juice (Fresh cut calamansi tastes the best)
5. 1 Cup Sugar (Brown or washed sugar could be used but white sugar is preferred)
6. 2 pcs. Red Chili Pepper chopped very fine (The red hot ones)
7. 1/2 Teaspoon of Salt
8. 1/2 Teaspoon Pepper (Do not use whole pepper, use crushed or ground pepper)
It only consists of 8 ingredients which are always available in the market or groceries. As I've said earlier, always use fresh ingredients especially for the red onions, celery and red chili.
How to make the best tasting Tokwa't Baboy (Tofu and Pork) sauce:
You will be needing a big bowl where all the ingredients will be mixed and a spoon to mix the ingredients.
1. Place Red Onions and Celery in the bowl.
2. Pour in Soy Sauce and Vinegar.
3. Add the Sugar and Red Chili.
4. Add Salt and Pepper.
5. Mix well with spoon until the sugar is dissolved. Done!
